Functional Food

Kluyveromyces B0399® (Kluyveromyces marxianus fragilis B0399) is a robust probiotic ingredient, belonging to the kingdom of yeasts, used by product manufacturers to create a wide range of probiotic-fortified foods and beverages. Isolated from kefir, an ancient “miraculous” fermented beverage from Caucasus, this lactic yeast (lactose utilizer) bring multiple beneficial health properties to natural, healthy, functional food products.

Applications Include:

ICECREAM AND FROSEN DESERTS
YOGURT, KEFIR AND FERMENTED MILKS
SOFT CHEESE
SALAMI
MUSLI AND CEREAL BARS
POWDERED BEVERAGES
SNACKS AND CONFECTIONARY
CHOCOLATE

How does Kluyveromyces B0399 make a difference?

The challenge with formulating probiotic foods and beverages is that many strains on the market are vegetative bacterial strains, which are more fragile and have diminished efficacy in food since

  • They do not survive stomach acid environment
  • They do not survive antibiotics
  • Thus are weakedn by food production processes

Kluyveromyces B0399 is a well-researched, Probiotic Lactic Yeast®. As a more complex eucaryotic cell, with a chitin cell-wall, it can survive most processing conditions and the route to the gut allowing it to provide multiple benefits to the consumers.

Protective chitin cell wall makes them highly resistant and stable
Survive the low pH of the stomach
Natural (non - transmissible) resistance to antibiotics
No need for refrigerated storage
Can be used in a wider range of food products
Very fragile
Vulnerable to low gastric pH and bile salts
Susceptible to most harsh manufacturing processes
Susceptible to antibiotics
Poor shelf-life, generally require refrigeration

With a unique set of functional traits, Probiotic Lactic Yeast® brings to food products PRObiotic, PREbiotic and POSTbiotic properties, making a real change to Functional Food Market!
